Yesterday I pulled out my copy of 4 Ingredients 2 (the red one), decided to make the Basic Biscuit recipe, mainly because I had all the ingredients on hand. The biscuits turned out delicious. I don't have a proper oven at the moment so used one of those counter top turbo ovens. Have found that it browns things like biscuits too much so what I do is to put the biscuits on the low rack and put the the taller rack over top, then put the tray that came with the oven on that. The tray protects the biscuits from browning too much before they are properly cooked. Towards the end of the cooking time if I think they are too pale I simply remove the tray so they can brown.
The recipe makes so many biscuits, 72 but I think I got more. I made 3 variations, plain, rolled in cinnamon sugar and with marmalade on top. Filled the biscuit jar and froze a container full of unbaked biscuits. This morning I thought I would have some for morning tea, there was just one, solitary, lonesome biscuit left. Even the marmalade ones had gone and I'm supposed the only one that likes marmalade. I just had to bake a batch for afternoon tea.
I have both books and what I have made from the recipes have always been very yummy, and most importantly very easy to make.
I know I had other things to write here but for the life of me I can't remember what they were, old age is creeping up fast! They must have been sooo important. I do remember that I promised to take my son bowling after school today and he has just walked in. I better go and make good my promise.
